発酵(はっこう、醱酵とも表記、英: fermentation) 1. * 生物が栄養素として取り込んだ有機物を嫌気的に(=酸素を使わずに)代謝してエネルギーを得る過程。 本項で詳説。 2. * 微生物が発酵食品など人間に有益な有機物を生成する過程全般を指す。1.の意味と違いでも良く、好気的、嫌気的な場合をそれぞれ好気的発酵、嫌気的発酵という。 3. * 茶葉から烏龍茶や紅茶を作る際の酸化酵素の働きによる酸化作用のことを歴史的経緯により「発酵」と呼ぶ。ただしプーアル茶などのを作る際の「発酵」はカビやバクテリアに2.の意味の発酵を行わせる過程である。 (1.もしくは2.の意味での)発酵は、その副産物として生成される有機物によって、アルコール発酵、乳酸発酵などに分類される。 微生物が1.の意味で発酵して有益な副産物を作れば、2.の意味をも満たすため、1.、2.の意味は相互に関連しているが、どちらかが他方を含意するわけではない。例えば1.の意味での発酵は2.の意味と違い「微生物」という制限がなく、人間をはじめとした動物は筋細胞で1.の意味での乳酸発酵を行っている(解糖という)。 2.の意味の発酵の関連用語として醸造がある。両者の関係は辞書等により異なるが例えば秋田県立大学の醸造学講座では発酵はその生成物が単一化合物なもの、醸造はその生成物が単一化合物ではなく、微生物の代謝生産物そのものが製品になるものとして区別している。 以下、単に「発酵」と言う際には、1.の意味を指すものとする。
