Ragout ([ʀa'gu], von französisch ragoûter ‚den Gaumen reizen‘, ‚Appetit machen‘) ist eine Gerichtsgattung von würfeligen Fleisch-, Geflügel-, Wildbret- oder auch Gemüsestücken in einer oft sämigen Sauce. Der Begriff wurde im 17. Jahrhundert aus dem gleichbedeutenden französischen ragoût entlehnt.
